Quick and easy low fat dish that is a vegetarian's delight.
3 cups penne
1 tsp. salt
1 Tbs. pine nuts
2½ cups chicken stock
1 ½ Tbs. flour
10 ounces fresh spinach, torn
Freshly grated Parmesan
Place pasta and salt in Fasta Pasta.
Add water to level 4.
Cook 10 minutes. Stir; cook 7 minutes.
Meanwhile:
Place pine nuts in a dry skillet on low heat. Stir constantly, cooking until nuts turn a golden brown. Remove from pan and set aside.
Bring chicken stock to a boil in the same skillet.
Slowly whisk in flour.
Add in spinach and stir frequently until it has cooked down.
Back to the Pasta:
Remove pasta from the microwave; drain.
Add spinach mixture; stir to combine.
Serve topped with pine nuts and Parmesan.
