The Original Microwave Cooker

Fresh Spinach and Penne

 Serves 4

Quick and easy low fat dish that is a vegetarian's delight. 

3 cups penne

 1 tsp. salt

 1 tbs. pine nuts

2 1/2 cups chicken stock

1 1/2 tbs. flour

10 oz. fresh spinach, torn

freshly grated Parmesan



  1. Place pasta and salt in cooker.
  2. Add water to level 4.
  3. Cook 10 mins. Stir; cook 7 mins.


  1. Place pine nuts in a dry skillet on low heat. Stir constantly, cooking until nuts turn golden brown. Remove from pan and set aside.
  2. Bring chicken stock to boil in the same skillet.
  3. Slowly whisk in flour.
  4. Add spinach and stir frequently until it has cooked down.

Back to the Pasta:

  1. Remove pasta from microwave; drain.
  2. Add to spinach mixture. Stir to combine.
  3. Serve topped with pine nuts and Parmesan.
