The Original Microwave Cooker

Italian Sausage Pasta

 Serves 4

This sauce works great with any pasta. 

 3 cups rigatoni

 1 tsp. salt

 4 mild or hot Italian sausages

1 small yellow onion

1 small red bell pepper

1/4 cup fresh parsley

1 can (28 oz.) diced tomatoes with juice

1/3 cup red wine

2 tsp. dried oregano

salt and pepper to taste

freshly grated Parmesan

Directions:

  1. Place pasta and salt in cooker.
  2. Add water to level 4.
  3. Cook 10 mins. Stir; cook 7 mins.

Meanwhile:

  1. Place sausage in a cold skillet. On medium heat, brown sausage, breaking apart as it cooks.
  2. Chop onion and pepper.
  3. Remove sausage from heat. Pour off all but 2 Tbs. of the fat.
  4. Add onion and pepper to the skillet. Cook 3-4 min. until softened.
  5. Finely chop parsley while onion cooks.
  6. Add tomatoes, sausage, wine, oregano, salt and pepper to skillet. Simmer on high 10 mins.

Back to the Pasta:

  1. Remove pasta from microwave; drain.
  2. Pour pasta over sauce and combine.
  3. Add parsley; sprinkle with Parmesan.
