The Original Microwave Cooker

Minestrone Soup

Serves 4

Comfort food for a chilly night. 

  2 cups small shell pasta

  3- 14 oz. cans vegetable broth

  1 medium potato

  1/2 onion

  1 clove garlic

  1- 10 oz. pkg. frozen mixed vegetables (with carrots and Lima beans)

  1 cup red kidney beans

  1 cup tomato sauce

  1- 14 oz. can diced tomatoes

  1 Tbs. fresh parsley

  1 Tbs. fresh basil

  salt and pepper to taste



  1. Place pasta and salt in cooker.
  2. Add water to level 4.
  3. Cook 13-14 mins.


  • Peel and dice potato. Dice onion. Mince garlic. set aside.
  • Heat a saute pan with olive oil. Add diced onions and garlic. Saute 1 min.
  • Add mixed vegetables, potato, kidney beans, tomato sauce, and diced tomatoes.
  • Let simmer until pasta is done.
  • Chop parsley and basil and set aside.

Back to the Pasta:

  • Remove pasta from microwave; do not drain.
  • Combine with vegetable mixture, remaining broth, parsley and basil.
  • Season with salt and pepper to taste.
